Pasture-Raised Pork
With a pork share, you’ll get meat delivered once every four weeks. Pork shares come in 4 sizes: mini (4-5 lbs), small (8-10 lbs.), medium (12-15 lbs.), and large (16-20 lbs.)
When you become a subscriber, technically you and other subscribers will be buying a portion of a live hog (also called buying “on the hoof”) from our farmer. We'll arrange its processing and delivery, however you won't receive all of your meat at once. Instead, we'll divide the cuts between our subscribers, keeping track of which cuts each subscriber receives. Over the course of the 8-month season, your distribution of cuts will be in the same proportions as they occur in a whole animal.
The cuts you’ll receive are:
Chops
- Roasts
- Ground sausage (seasoned)
- Ground pork (unseasoned)
- Spare ribs
- Side meat (otherwise known as uncured bacon, which you can cure yourself – we’ll tell you how – or use in other dishes)
Again, you and your fellow subscribers are collectively buying this hog "on the hoof", and then paying us for completing all the administrative aspects and shipping and delivery fees associated with this service. This equates to about $4.95 to $5.25 per pound for all cuts, depending on the size of your subscription. (That is, a large share is priced around $4.95 per pound, while a mini share is around $5.25 per pound.)
