Pasture-Raised Poultry and Spring-Raised Trout
Poultry
Our chickens and turkeys, like our other animals, come from small family farms, where they are free to roam and graze on open fields. Our turkey farmer, Mark Horst, raises only about 60 turkeys each year, and our chicken farmer, Allen Knicely (Marks brother-in-law) raises about 300 birds a month. By dealing only with very small farms, we develop personal relationships with our farmers, and know that their animals are well cared for, free of hormones and antibiotics, and free to exist in natural, open spaces.
Youve never tasted chicken nor turkey like this before. The flesh is firm, yet tender, never fatty like mass-produced birds, and the flavor is out of this world.
Chicken
Other than the eggs, bibb lettuce, bread, (and all the fresh, seasonal produce, now that I begin to try to choose a favorite) what makes us most happy each week are the chickens we receive from Horse and Buggy Produce. We have stopped buying poultry from anyone else all together as these -- whether cooked on our grill rôtisserie or cut up as part of a tagine or soup – are the best chickens we have found in the Charlottesville area. Our whole chickens come to you every four weeks. Chicken shares come in 4 sizes: mini (1 bird), small (2 birds), medium (3 birds), and large (4 birds). They average around 4.5 pounds each.
When you become a subscriber, technically you and other subscribers will be buying live chickens directly from our farmer (who also butchers them for you), and then paying us for completing all the administrative aspects and shipping and delivery fees associated with this service. This equates to about $3.05 to $4.00 per pound, depending on the size of your subscription and your location. Please refer to our Pricing-at-a-Glance documents for more details.
Turkey
Our whole turkeys will arrive in time for Thanksgiving, either fresh or frozen, depending on how long before the big holiday they arrive at their harvestable weight. Our birds will range from about 12 to 15 pounds, although we can provide larger ones with advanced notice.
When you buy a turkey, technically you and other subscribers will be buying live turkeys directly from our farmer (who also butchers them for you), and then paying us for completing all the administrative aspects and shipping and delivery fees associated with this service.
We will let you know when our Thanksgiving turkeys are available via our e-newsletter, so make sure you subscribe to it, because our birds sell out quickly.
Trout

Our brook and rainbow trout are raised in the mountains about 20 miles south of Staunton, Virginia. Their waters come from natural springs which pour straight out of the mountain’s side only a few hundred yards away. Our trout farmer, Brian Plemmons, raises about two to three hundred fish a month for us.
Our trout will be delivered to you whole and completely gutted once every four weeks. Trout shares come in 4 sizes: mini (2 fish), small (4 fish), medium (6 fish), and large (8 fish). (Although, none of them are red fish or blue fish, thank you very much Dr. Seuss.) They average around 1 pound each.
When you become a subscriber, technically you and other subscribers will be buying live trout directly from our farmer, and then paying us for completing all the administrative aspects and shipping and delivery fees associated with this service. Most of the time they’ll arrive fresh on crushed ice, but occasionally we’ll freeze them if we feel it’s necessary to ensure their quality. (This usually occurs during extremely warm weather periods.)
